Who we are

One idea, no shortcuts, and a line out the door

Giovanni Di Palma opened Antico Pizzeria Napoletana on Hemphill Avenue in Atlanta in 2009 with a single idea: an artisan pizza made from the highest-quality ingredients, with no shortcuts anywhere in it. He called it Neo-Neapolitan — Naples-style, with a little New York in it. No press, no marketing, no plan beyond making it right. People found it, started lining up, and never really stopped.

Antico Casa is that same pizza — now in the freezer aisle, still made by hand.

Why Gio made it

Solved with time and people — not additives and machines

Most frozen pizza reaches the shelf through mass production that needs additives — dough conditioners so a machine can handle the dough, stabilizers so it survives the trip. Gio spent over ten years refusing to do that. So the Margherita is, essentially, six things: Italian flour, spring water, sea salt, organic tomatoes, real cheese including buffalo mozzarella, and fresh basil and garlic — finished with extra-virgin olive oil. No dough conditioners. No artificial preservatives, colors, or flavors. A label you can read out loud without explaining anything.

Steps a machine could do faster, we still do by hand — you can taste the difference, and see it on the pie.

Opened by hand

Not pressed, not sheeted, not rolled. A person stretches every crust — which is why they're never perfectly round.

Topped by hand

Sauce ladled, cheese torn, basil placed. No two pies look the same, because no two should.

Aged, fermented dough

Real Italian flour — not enriched, no folic acid. Time does the work that chemicals do in a factory.

Ready in ~10 minutes

Thaw, oven to 425°, top rack, about ten minutes. Restaurant-quality on a weeknight.
